FOURME
Fourme with apples

This is an original way of eating with relish an exceptional cheese which comes from Forez.
Cut a rye bread into two (or take a slice of rye bread), put a slice of apple of 1.5 cm wide. Then, cover it with a slice of fourme de montbrisson (cheese) sprinkled with grated GruyËre and toast it a moment so that it melts and cooks a little while you put a " chiffonade de salade " (which is salad that has been cut in strips) in a plate .

Then dress it with olive oil, apple vinegar and a few pine kernels .When the cheese is cooked enough, lay down the toasted slice of bread on the salad.

Râpée de pommes de terre ( Grated potatoes)

It is a traditional recipe from our region. First thing to remember : two potatoes for one person.


Peel and wash the potatoes and then, grate them. This should be done quickly so that the potatoes donít turn black. Season them with salt and pepper. Add a whipped egg (like an omelette) and mix it all. You can also add thyme. Then, be ready for several cookings. Heat oil in a frying pan and lay down a part of the mixture you have arranged like a thin and round pancake. You can cook two or three pancakes at a time depending on the size of your frying pan.

When the pancakes are sufficiently glazed you can turn them. Once they are enough cooked, keep the pancakes warm in order to serve your guests at the same time.

Apple cake

Baked apples with honey

Chose apples with a firm flesh and which can bear the cooking.
For example, the granny smith or the golden (apple) from the Pilat. Dig a hole at the top of the apple so as to dig out the pips. Put a knob of butter into the hole and also, pour a spoonful of liquid honey (preferably honey from fir).

Put the apples in the oven and sprinkle them with a spoonful of honey while they are cooking. Once the apples are glazed (you will have to wait between 15 or 20 minutes), take them out of the oven and let them cool a little while and serve them if they are still tepid.
